So many vegetarian recipes and cookbooks I come across are either too elaborate or call for ingredients I don't normally buy or can find. I've also found myself cooking a lot of Indian and Mexican meals. While I love those types of foods, I also like and miss simple home cooking casseroles, skillets, and more traditional flavors I can easily get my two and a half year old to eat. That's what you'll find in this cookbook (along with several Indian, Mediterranean, Mexican, etc recipes). I was so excited to open it and start marking recipe after recipe to try. I haven't made anything from it yet, but I'm expecting them to be good based on my experience with Betty Crocker's website. They include a vegetarian section of recipes and most everything I've had from there has been great! I'd definitely recommend this cookbook, especially for the price. Don't expect gourmet meals, but something you can easily cook for your family.
