First, I am admittedly choosy about cookbooks; I return about 80% of the cookbooks I buy online because, as glossy as the photo might be, I know I'll never actually make the recipes—they either call for too many obscure ingredients, are too simple and basic, or lack photos that tell me what the final dish should look like. I prefer to use websites like NYT Cooking, Food 52, and Epicurious for recipes. HOWEVER, this book is an exception; many of the recipes are accessible and interesting.I have a few nits to pick—for example, hopefully no one truly needs a recipe for "Jammy Egg Toast" that calls for making toast, buttering it, and topping with a soft-boiled egg; and the recipe for "Saucy Beans and Eggs" only uses the saute function of the IP... in which case, why on earth use the IP when you can simply use a pan on the stove and control the heat more effectively?BUT many of the other recipes are excellent, including for basics like lentil dal or chicken tikka masala for which you'll find a million untested (and as a result, not as good) recipes online. Our favorites so far: Chickpea Coconut Curry, a simple Red Lentil Dal with Citrus and Herbs, Turkey Meatball Soup with Macaroni and Kale, Brothy Beef Stew with Dill, Kimchi and Tofu Stew, Butter-Braised Radishes, Maple-Cinnamon Squash Agrodolce, Creamed Mexican Street Corn, Biryani-style Rice, Coconut-Turmeric Rice with Almonds and Herbs, Easy Eggplant Parmesan (as the author's notes state, "Strict Italophiles, move along"), a pantry-friendly Chicken Tikka Masala, Red Curry Shrimp, Moroccan-Spiced Chicken and Rice, Pulled Pork Tacos, Double-the-Vegetables Pot Roast, Raspberry Maple Jam (!), Quick Pomodoro Sauce—I could go on.I'm not a baker and don't typically make desserts, but the dessert section is pared down and looks simple/delicious enough that I might even try a few. In short: If you're not sure how to use your IP to the best of its talents, or if like me you're getting tired of your go-to IP recipes, buy this book!
